
Recipe: mo'mugi Maple Jelly
We looove maple and it really complements the nutty roast of mo'mugi in this recipe. We think you'll agree the jelly is a delicious and refreshing dessert that is so easy to make!
Ingredients:
- 3 cups of cold mo'mugi barley tea
- 3 tablespoons of maple syrup
- 3 tablespoons of cornstarch
- 1/4 teaspoon of salt
- 1/2 teaspoon of vanilla extract (optional)
- evaporated milk or whipped cream, for topping
- mint leaves for topping
Instructions:

In a saucepan, combine the mo'mugi tea, maple syrup, cornstarch, and salt. Stir well to combine.

Bring the mixture to a boil over medium heat, stirring constantly. Reduce the heat to low and let simmer for 5 minutes, stirring occasionally.

Remove the saucepan from the heat and stir in the vanilla extract, if using.

Pour the mixture into a 9-inch square baking dish or individual molds. Let cool to room temperature, then refrigerate for at least 2 hours or until set.

To serve, cut the jelly into squares or remove from the molds and serve on a plate. Garnish with cream or evaporated milk, and a fresh mint leaf, mmm mmm!
